Recipe: Delicious Ginger Bread Cookies
We had RAVE reviews of the gingerbread cookies we shared with gorgeous bride tribes at the Hotel Kurrajong Wedding Open Day and thought we'd share our recipe with you. They aren't good for you, but they are super delicious!
Hot Tips:
1. These beauties take a while to make. We recommend making the cookies one day, and icing them the next.

Ingredients:
Melted butter, to grease
125g butter, at room temperature
100g (1/2 cup, firmly packed) brown sugar
125ml (1/2 cup) golden syrup
1 egg, separated
375g (2 1/2 cups) plain flour
1 tablespoon ground ginger
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
Plain flour, to dust
150g (1 cup) pure icing sugar, sifted
liquid food colouring in the colours of your choice
optional: bottle of wine of your choice.
Cookie Method:
Step 1 - Preheat oven to 180°C. Brush 2 baking trays with melted butter to lightly grease.
Step 2 - Use an electric beater to beat the butter and sugar in a bowl until pale and creamy. Add the golden syrup and egg yolk and beat until combined (set aside the egg white for use with the icing). Stir in the flour, ginger, mixed spice and bicarbonate of soda. Turn onto a lightly floured surface and knead until smooth. Press dough into a disc. Cover with plastic wrap and place in the fridge for 30 minutes to rest. Since this process was tiring, sit down and drink some wine.
Step 3 - Now that you've finished your wine, place the dough between 2 sheets of baking paper and roll out until about 4mm thick. Use a your choice of cookie cutter shape, utilising the play-doh skills you acquired in your childhood to cut out shapes. Place on trays about 3cm apart. Repeat with any excess dough.
Step 4 - Bake in oven for 10 minutes or until brown. Remove from oven. Transfer to a rack to cool. Stare at the cookies wondering if someone will notice if you accidentally ate a few now, while knowing that they taste really good still warm.
Icing Method: Step 1 -Place egg white in a clean, dry bowl. Use an electric beater to beat until soft peaks form. Gradually add icing sugar and beat until stiff peaks form. If you're feeling creative and you'd like to create multiple icing colours, divide the icing among a few bowls. Add desired food colouring to each bowl and stir until combined. Be surprised by how much food colouring you had to put in to get the colour you wanted.
Step 2 - Place prepared icings in small plastic bags (glad bags are ace!). Cut a small hole in a corner of each bag. Pipe icing over your gingerbread creations and decorate as you wish. Think about how impressive you are, and try to come up with reasons to start eating them now.
Step 3 - bring back that wine and congratulate yourself on how impressive you are!
